Pacdon Park’s true Highland Haggis is made using local lamb pluck, beef suet and an authentic blend of spices and weighs in close to 450g in size. Haggis is such a versatile product. Forget just just the classic haggis, neaps and tatties or full Scottish fry up. Think hot salad, stuffing of game (and not so game) birds, replace or add to beef mince dishes for that umami factor. Make the next level lasagna, shepherd’s pie, bolognese or burger. Pacdon Park “make what they miss” – A free range British butchery based in Echuca-Moama, Victoria and make authentic British recipes using the finest Australian, free range Ingredients. NOTE: Pacdon Park Haggis is a frozen product. (straight from Wikipedia) Scotland’s national dish is a savoury, meaty pudding containing sheep’s pluck (heart, liver, and lungs); minced with onion, oatmeal, suet, spices, and salt, mixed with stock, and cooked while traditionally encased in the animal’s stomach, is now often in an artificial casing instead. It’s traditionally served with “neeps and tatties” (turnips and potatoes boiled and mashed separately) and a dram (a glass of Scotch whisky), especially as the main course of a Burns Supper due to Scot poet Robert Burns’ poem address to a Haggis of 1787. According to the 2001 English edition of the Larousse Gastronomique: “Although its description is not immediately appealing, it has an excellent nutty texture and delicious savoury flavour”.
